Bonito kelp water dogoshi noodles cold +Omori (Large Portion)
This time we will introduce the famous ``Katsuo Kombusui Nodogoshi-men Hiyashi (Chilled Bonito and Kelp-Water Noodles) (¥1,350)” of “Omori (Large Portion) (150 yen)” I asked.
You can choose to have the soup cold or hot, and since it's the hottest time of summer, I chose cold.
After waiting about 10 minutes, the rice bowl arrived.
Let's get it then.
Noodles
It is a flat straight type.
I think it contains whole wheat flour because you can see grains in the noodles.
Although it is flat, it is not thick, so it feels a little thin for Tsukemen (Dipping Noodles), but the texture is plump and chewy.
When you bite into it, you can feel the firmness of wheat.
The katsuo-kombusui broth has a pronounced bonito flavor as well as the depth of kelp.
seaweed salt
There is seaweed salt on the table and you can sprinkle it on top.
The saltiness and umami are added, and the umami of the bonito-konbu water stands out even more.
dipping sauce
The first thing you notice is the bonito, and it gives you the impression that it's a seafood soup stock.
Since it was served cold, I didn't really notice the flavor of the soy sauce.
It's easy to feel the fat directly, so warm may have been the correct answer. .
I eat the noodles with dipping sauce, and it doesn't go well with it, but I personally prefer eating the noodles as is or with sea salt.
The soup was made with the kelp water that the noodles were soaked in, but the dipping sauce itself didn't taste too salty, so I went with it almost as is.
Chashu (Braised Pork)
It was a rare type of char siu.
Since the dipping sauce is cold, the chashu remains cold as well.
If you put it in your mouth and chew for a little while, the fat will start to melt.
In this respect, the soup may have been the correct answer. .
Sudachi (Japanese Citrus)
There is a sudachi on the table, and adding this will add some freshness.
Impressions and Rating
Fuki Seimen KenkyujoIt was delicious.
The noodles were especially good.
I think it would have been better to have the dipping sauce warmer, but honestly I think it would have been better with the noodles and salted seaweed.
The noodles and moshio are so overwhelmingly delicious that if I were to open a ramen shop in the future, I would probably just use bonito kelp water, noodles, and moshio.
The reviews on Google Mapss are pretty bad, but I don't think the taste is bad.
I didn't feel that the customer service attitude was particularly bad, so I guess it depends on the time of day. .
At least during lunch time there was no problem.
The only and biggest drawback for me personally was that it was extremely hot inside.
There was a handy fan on the table, and with the air volume set to maximum, I was sweating even when I ate the cold soup.
I think it would be best to avoid mid-summer and go from early fall to early summer. .
