Ramen

『Mentoku” is a Jiro-style/Jiro-inspired store.

It seems that there used to be a store in Ueno, but now there is only a Toyocho store.

Since this is my first visit, I chose the default "Ramen (930 yen)” was selected.

When handing over your meal ticket, you can select the type of noodles (thick, normal, thin) and the amount of vegetables (large, medium, small).

I asked for thick noodles and a normal amount of vegetables.

First of all, it is rare that you can choose the type of noodles.

Jiro-style noodles are known for thick noodles, so I decided to go with thick noodles, but I'm also interested in regular and thin noodles.

And it's easy to understand that the timing of the call is when you hand over the food ticket.

Also, there are only a few call items and they are posted, so I don't think you will be confused.

The rice bowl was served in about 10 minutes after handing over the ticket.

Yasai

The Yasai is boiled just to the point that I like it.

I felt like the ratio of bean sprouts to cabbage was about 8:2 to 9:1.

Since there is no abracol, you will have to eat the vegetables directly, so I think it would be better to soak them in the soup and season them, or use a table top to eat them.

Soup

The soup is non-emulsified and has a solid layer of liquid oil.

You can feel the flavor of the pork and the sharpness of the maple.

I get the impression that it's not that it's working that hard, but that it's working moderately.

It has a balanced or gentle taste.

Noodles

It doesn't have the same texture as an eagle, but it does have a texture similar to that of an eagle.

The doneness of boiling is more than soft, which is also my preference.

You can really taste the wheat, and you get the feeling that you're eating Jiro-type food.

The normal amount of noodles is 250g, which is quite voluminous.

The large one is 350g.

pig

It looks like pork, but when you eat it, it's not as smooth as it should be, but it's juicy and easy to bite into, and you can really taste the flavor of the pork.

Since it mainly consists of lean meat, even the default 2 slices was quite filling.

If you add more pigs, you may be forced to fight a lot of food.

garlic

Since the call is only about the thickness of the noodles and the amount of greens, what about garlic? I think some of you may have thought so.

There is a wide selection of tabletop seasonings, and you can add the garlic yourself.

Personally, I like the self-serve version because you can put in the amount you want, and it's also easier to add more later.

As a store, it may be difficult to manage the hygiene of containers, etc. .

The only table seasonings I used were Kaeshi and garlic, but there were some seasonings that would have been charged extra at other restaurants, such as curry powder.

You can change the flavor to your liking by adding spicy miso, chili pepper, pepper, etc.

『Mentoku”, the overall impression was average to good.

It's not that it's super delicious, but it has a Jiro-like feel to it, and it's sure to satisfy your Jiro cravings.

There is always a long line for Jiro Jiro, and recently,Butayama” has also started to line up quite a bit.
