Ramen Futoru
Today I am visiting Ikebukuro.
After drinking at the usual whiskey bar, it's a natural way to finish.
So, ``Ramen Futoru”.

This is a new store that opened on Thursday, March 6, 2025.
As you can guess from the store name, it is a Jiro-style store.
What's a little interesting is that this shop originated in Ishikawa Prefecture.
In Tokyo, Hikifune also seems to have a store.
I visited at 22:00 on a weekday, an immoral time to eat Jiro-style food, and although there was no wait, the restaurant was almost full.
Chu Ramen (Medium Ramen)
There is a food ticket system, and you purchase food from the ticket machine located right after entering the entrance.
Only cash was accepted at the ticket machine.
The basic menu consists of ramen and no soup.
They come in large, medium and small sizes, but the biggest feature is that the price is the same no matter which size you choose.
The quantities are small 200g (320g after boiling), medium 300g (480g after boiling), and large 400g (540g after boiling).
It's easy to understand that it says after boiling.
Like most Jiro-style ramen noodles, the portions are larger than those at regular ramen shops, so choose the amount that won't leave any leftovers.
This time, “Chu Ramen (Medium Ramen) (1,000 yen)” was selected.
By the way, the price is the same without soup.
Five minutes after I was seated, I was asked to call, and this time I said, ``Abura (Pork Back Fat)” was called.
Calls are only available for Abramashi, Mashimashi, Yasai-mashi, and Mashimashi, and these are free for a limited time.
Let's get it then.
Yasai + Abura (Vegetables + Pork Back Fat)
Yasai is 100% bean sprouts and has a moderate texture.
Abracol has a lot of large back fat, so when you eat it as an abra salad, it is delicious with the sweetness of vegetable oil and the sweetness of abra.
Soup
The soup was an emulsion type and was delicious.
The soy sauce has a sharp effect, and you can really feel the aroma and taste of the pork.
Many Jiro-style restaurants don't have this much of a pig-like feel, but this one gives an impression that it's very similar to Jiro's.
Noodles
Although the noodles are thick, the surface is smooth.
The texture is chewy and has a moderate amount of elasticity, but I think if the surface was more rough, it would be more chewy.

Although the pork had a guinea-like texture, it had a lot of fiber and felt a little dry.

At the beginning, I stated that the only call available was Abra Yasai.
Speaking of Jiro/Jiro type, it's garlic! Well, the stronger the flavor, the better, so it's Karame! If you think it's impossible to not have these, don't worry.
There is garlic sauce on the table.
In other words, it's all-you-can-eat and all-you-can-eat.
We also have vinegar, chili oil, fish meal, etc., so you won't have to worry about the taste changing.
I added garlic along the way to boost the junkiness.
Impressions
Ramen FutoruIt was delicious.
The noodles were a little lacking, but I think the soup was by far the best among the Jiro types.
Speaking of Jiro-kei, ``Butayama”, the noodles are ranked first in the pork bowl, but the soup is definitely the fattest one.

Noodles are important for ramen, but the soup is also important.
In that sense, I think it was more delicious than Butayama.
I was concerned that the inside of the store was a little dirty even though it was small and had just opened. .
I think it's because it just opened and it's busy, so I'd like to visit again after some time.
