Soba no Suehiro Hatchobori
Many standing soba restaurants are only open on weekdays, so it's not easy to visit them. .
So, I set aside some time on a weekday morning and did it.Soba no Suehiro Hatchobori” I came to.

It would be interesting to look into the history of this shop, but it would be too long so I will omit it here.
This store is closed on Sundays, so you can visit it on Saturdays and public holidays.
I came here on a weekday because I wanted to visit other nearby stores that are only open on weekdays.
The inside of the restaurant is relatively small, with about 5 people waiting in line to eat while standing.
If the restaurant is full, you can order and eat outside while holding your bowl.
I visited around 7:00 on a weekday, and there were about 5 people outside and 2 to 3 people inside.
Since the restaurant was empty, we decided to eat inside, but many of the people who came later also ate outside, and we realized the reason for this was when we were eating. .
Futo Soba (Thick Soba)+Jumbo Geso (Jumbo Squid Tentacles)
Orders are given orally.
Payment method is cash only.
This time we will introduce the famous ``Futo Soba (Thick Soba) (380 yen)”, and “Jumbo Geso (Jumbo Squid Tentacles) (270 yen)” I asked.
I think it took about 1 to 2 minutes to serve it, probably because it was so thick.
In the meantime, pour some water, reserve a seat, and let's enjoy.
Soba Noodles
The surface is wrinkled and reminiscent of Jiro-style masks.
It's chewy when you bite into it.
Each one is thick enough to live up to the name Futo Soba (Thick Soba), so it can be difficult to slurp.
Tsuyu (Dipping Broth)
It has a black color that is called dark, but it is not as salty as it looks.
If anything, it's more delicious than Kaeshi, with a richer and richer soup stock.
The green onions are thick and have a strong presence.
Jumbo Geso (Jumbo Squid Tentacles)
It is mostly composed of Geso (Squid Tentacles).
It has a chewy and elastic texture, so you'll have to chew it a lot, and since it's jumbo, it's also large, so it's quite filling.
It was delicious, but I'm glad it was regular size rather than jumbo. .
chili pepper
I tried adding chili pepper for a different taste, but it was spicier than shichimi, which was good.
I hope other stores adopt this. .
Impressions
I think it's delicious overall.
I think the soup was especially good, so I can see why it's popular.
However, Futo Soba (Thick Soba) does not have a chewy feel, but is chewy, which is not what I like.
Most of the people ordered regular soba, so I would like to try regular soba next time.
The reason so many people eat outside even though the restaurant is empty is because it's so damn hot inside.
When I visited, the weather forecast said it was 27 degrees Celsius, but it felt much hotter inside the store.
The experience is similar to that of a very hot day, so I think it's 35 degrees Celsius or more.
The air conditioner and electric fan were running, but since it was hot and I was eating hot food, they didn't really help as the T-shirt I was wearing was covered in sweat.
If you're visiting in the summer, we recommend eating outside in the early morning when it's cooler.
Personally, I'd probably visit again when it's a little cooler, like in the fall. .
