You can choose between cold and hot noodles for the same price, and the cold one will be served with zaru soba, while the hot one will be served with dipping sauce.

Since it's still winter and it's cold in the morning, I chose warm.

After purchasing a meal ticket, you wait at your seat without handing over the ticket, and when the number written on the ticket is called, you go to the food counter and pick it up.

It was served in about 3 minutes.

The serving time is quite early, but it feels like it takes a little longer than a normal standing soba restaurant.

Buckwheat flour is more expensive than wheat flour, so if the proportion of buckwheat flour increases, the cost will also increase.

At a regular standing soba restaurant, the percentage of soba flour is said to be 10-20%, so you can see how high this number is.

Also, while 100 percent soba made only with buckwheat flour allows you to enjoy the flavor and taste of soba, it is easy to break, so making soba noodles requires the skill of a craftsman.

If you hire a craftsman, the labor costs will go up, so it is basically impossible to provide stand-up soba noodles with low profits and high sales.

However, by using an extrusion type noodle making machine, this shop is able to offer 100 percent soba at a price that is comparable to other stand-up soba shops.

Freshly fried tempura is nice, but it tends to fall apart, and if you don't eat it first, it will have a big impact on the soup, so it doesn't really match the way I eat it.

I can't compare it to soba restaurants that cost over 1,000 yen, but it's a 100 percent soba among stand-up soba restaurants, so I'm very satisfied.
