Omakase Course

This time, my wife and I are visiting.

At the start of the event, we were told that taking photos was OK, but that we had graduated from Tabelog, so we were asked to refrain from posting.

This is not a tabelog. . So I'm going to post it.

Now, let me introduce you to the menu we received this time.

1 item: Sariko soup stock

First up is the sardine soup stock from Kannonji in Kagawa Prefecture.

You can also feel the flavor of dried sardines and the bitterness and harshness of the liver and head.

You can also feel the woodiness that comes from the wooden container.

Although the ingredients are simple, this cup has a complex flavor that warms my stomach and stimulates my appetite, even though I was cold due to the air conditioner on the way there.

1st drink: Beer

I asked for a beer for the first drink.

COEDO beer is a so-called craft beer produced in Kawagoe, Saitama Prefecture.

The impression is that it is fruity and not too bitter.

I was a little worried because it's an IPA, but it's fruity and bitter enough that it won't interfere with your meal.

2nd item: Abalone liver dressing

Abalone appears in the second dish.

The sauce uses not only liver, but also sake koji and butter.

It has a chewy texture and is full of umami with every bite, and the sauce has a firm texture and creaminess from the liver, which goes well with alcohol.

3 items: Shirasu soba

Soba is combined with a sauce made from crushed whitebait and tree buds from Wakayama Prefecture.

The soba itself has a strong aroma, and the refreshing impression of the buds is perfect for summer.

4th item: Managatsuo

It is said that they are left exposed to the wind for a week to age.

It is said that they are using liquor thief's sauce.

The flesh seems to be soft and flavorful, but the flavor explodes from the skin and grains.

To put it best, it has an umami flavor, but to say it badly, it has a slightly natto-like feel.

5th item: Risotto

The risotto is made with rice from Tono City, Iwate Prefecture, and sweetfish from Gunjo, Gifu Prefecture.

It had a melon-like aroma from the sweetfish, a bittersweet taste from the liver, and a buttery aroma.

2nd cup: Nihonshu (Sake) Length and diameter

This is Takemichi from Shimane Prefecture.

It has a sweet taste with hints of ramune and brown sugar.

It's sweet, but not too sweet, so it goes well with food.

Item 6: Blue crab marinated in brandy

I think this is one of Sushi Kimura's specialty items.

It has the scent of brandy and a rich taste, and the Japanese pepper adds a nice touch.

The sweetness of the crab meat, the stickiness of the roe, the brandy, and the Japanese pepper go well together.

You can suck and eat without worrying about getting your hands or mouth dirty.

Everyone eats like that, so don't worry about it and eat it.

Although the seasoning is different, it is similar to the Korean dish ganjang gejang.

with Tamago Gohan (Rice with Egg Yolk)

It originally contains rice mixed with egg yolk.

Mix it well with the remaining sauce.

The egg yolks give the rich sauce a richer flavor.

All I can say is that it's delicious.

Gari

Now that the gari has appeared, we will move on to the nigiri.

It has a simple taste of lactic acid and spiciness, but it cuts through the aftertaste quickly.

When I heard about it, I was told that it is made using only vinegar and salt.

1st piece: Shari

First of all, I'll have just the sushi rice.

There was no performance of cutting the shari, so I think it was cooked before the course started.

The acidity is modest, giving the impression that the cooking is a little soft.

2nd piece: Botan shrimp

It has a slightly rare flavor and a sticky texture and sweetness.

I think it goes well with the slightly softer sushi rice.

The size of the sushi seems to be quite large.

Women are allowed to eat a small amount of sushi, but men are told not to eat it even if they try hard. (lol)

3rd piece: Golden sea bream

The texture is sticky and the flavor is strong.

4th piece: Horse mackerel

The flavor is quite strong.

It also has a sticky texture.

5th piece: Whale

The part of the fish is the tail, which has a frosty texture, similar to what is known as fatty tuna.

This is said to have been left to rest for two weeks.

It had a meaty impression, similar to horse sashimi.

Third cup: Nihonshu (Sake) ego

The scent has tropical fruits.

The taste was fruit, rice grain, and brown sugar, giving it a complex taste for Nihonshu (Sake).

By the way, each bottle costs about 70,000 yen. .

6th piece: Red sea urchin

Red sea urchin from Oita Prefecture.

Although it has a freshness, it also has a strong sweetness.

Of course, it's a delicious sea urchin that doesn't taste like alum.

7th piece: Finished horse mackerel

Earlier, horse mackerel was served, but this time it was seasoned with vinegar.

I had the impression that the acidity and umami were stronger, and the surface was a little dry due to being sealed.

8th piece: Abalone

It is said that they are cut into thin and wide pieces because the fragrance is easily released.

It's certainly easy to smell.

It has a chewy texture and is full of flavor with every bite.

9th piece: Bonito

The handler changed to the landlady.

I found out later that it was rumored that she was not the landlady, but the second-in-command.

The bonito flakes are placed between the toppings and the sushi rice, giving the impression that the flavor and umami are stronger.

The grip itself has a softer feel.

10th piece: Clams

The shellfish itself is sweet and crunchy.

However, I had the impression that it was separated from the rice.

11th piece: Tuna plum

Seared tuna with crunchy plums.

The crunchy texture is a nice accent to the sticky texture.

While you can feel the flavor of the tuna, the sourness is also nice here and there.

12th piece: Sardine

At this point, the grip returns to the general.

It has a strong acidity, and has a rich, fatty flavor.

13th piece: Marlin

It is said to be aged for 48 days.

It was a dish called the aged sushi, which had a sticky texture and a rich flavor, with a lingering flavor and aroma.

14th piece: Conger eel

You can feel the aroma, flavor, and fat in the fluffy texture.

It gives the impression that it is fused with Shari.

ball

The last one is the ball.

The balls themselves were slightly sweet, and the sourness and sweetness of the rice was a nice touch.

Since it has a crunchy texture, I don't know if it should be counted as one piece. .

Impressions and Rating

As mentioned above, my wife and I each ordered a course of 6 items and 14 pieces of nigiri, and the total cost was approximately 110,000 yen.

That's the most I've ever paid for one meal. (Laughs?) (Tears?)

It's delicious, and I think the price is reasonable considering the atmosphere and service. .

Is there a clear difference from sushi in the 30,000 yen class? .

I think they use better materials than those in the 30,000 yen class, but if you compare 100 yen tuna and 10,000 yen tuna, the difference is clear, but the higher the price, the less you can tell the difference. .

So, I didn't really notice a big difference.

I'm not rich enough to pay 110,000 yen, so I feel like the cost performance is bad.

Also, the Otsumami (Snacks) tends to be full of carbohydrates such as soba and risotto, so I'm curious about the fact that the abalone and horse mackerel are served twice, albeit in different ways.

I was a little hesitant to visit here, wondering what 50,000 yen sushi would be like, but I felt I should visit once I could earn a little more.

I will work hard and earn money. . ! !
