I visited around 19:50 on a weekday.

The restaurant is fully booked and there are about 15 to 20 people in line.

I expected a long wait, but since there was a book I wanted to read, I decided to join the queue.

We arrived at the bowl around 8:25 pm, so it took a total of just over 30 minutes after joining the queue.

The last time I ate hiyashi chuka, the situation was ``here』

Ordering and Payment

Ordering method: Meal ticket system
How to pay: Cash, credit card, electronic money, QR code payment possible

Ko Hiyashi Chuka (Small Chilled Chinese-Style Noodles) 1,250 yen

This time, “Ko Hiyashi Chuka (Small Chilled Chinese-Style Noodles) (1,250 yen)”I ordered.

Hiyashi chuka is a limited time menu from June 1st to September 30th.

Just like last year, I came here again this year to enjoy a summer tradition.

When giving the ticket for hiyashi chuka, you will be asked if it has gari mayo, so of course I asked for it.

Then, when the bowl arrives, you will be asked to call it just like regular ramen.

This time, “garlic oil” I asked.

So let's have it.

Yasai

Yasai is also thoroughly chilled.

Made from 100% bean sprouts, it has a crunchy texture.

On top of that is cut cabbage.

It goes without saying that yasai and mayonnaise go well together, but it also goes well with gari mayo, which has the added flavor of garlic.

You can enjoy the combination of the texture of the cold vegetable and the rich gari mayo.

Noodles

The noodles are stable and fluffy.

Among the many Jiro-inspired noodles, I think Butayama's noodles stand out because they are closer to Jiro.

Because the noodles are thoroughly seasoned with cold water, you can more easily taste the wheat flavor than when eating hot ramen.

The chewy texture stands out, and you can enjoy the deliciousness of the noodles that is unique to hiyashi chuka.

pig

The pig on this day was slightly reddish.

The softness is as usual.

I didn't notice any issues with the texture, so I think the reddish tinge was due to the material itself.

Impressions and Rating

I was able to safely enjoy Butayama's hiyashi chuka, a summer tradition, this year as well.

Just like last year, it has a consistent taste and is a dish you should try at least once a year.

The combination of the rich flavor of Gari Mayo and the springy noodles cooked in cold water is delicious.

On the other hand, in the second half, the taste of the mayonnaise became a little harsh, just like last year.

I made full use of table-top seasonings such as black pepper and vinegar to vary the taste as I ate.

Rather than wanting to eat it over and over again every year, it's something you'll want to eat once during the summer.

I would like to try it again next year.
