The ticket machine only accepts cash and only accepts 1,000 yen bills, so it's a good idea to prepare them in advance.
Kombusui Tsukemen Shio (Salt Kelp-Water Dipping Noodles)
This time, “Bonito kelp water tsukemen salt (1,050 yen)” was selected.
You can choose the flavor from soy sauce or salt, and the amount of noodles from 250g or 300g.
Use the red pen on the table to mark your favorite ticket on the ticket and hand it to the staff.
This time I chose 300g of salt.
Due to the timing of the cooking, the rice bowl arrived about 20 minutes after I handed over the ticket.

Noodles
The noodles are very thick and slightly flat, indicating that this is a second brand from the Jiro line.
Since it's tsukemen, let's try just the noodles first.
These noodles are chewy and have a distinct wheat flavor.
The bonito kelp water itself has a little viscosity, so it has a smooth surface.
If it wasn't viscous, I think it would be grainy and have a chewy texture.
This is by far my favorite noodle.

Before we move on to the dipping sauce, let's first enjoy it with salted seaweed.
The salt brings out the flavor and wheat flavor.
You can even use salted seaweed without dipping it in dipping sauce.

Now let's dip it in the dipping sauce you've been waiting for.
I think they use chicken oil and soup stock, so the flavor of the chicken explodes.
Although it has the impression that the chicken is a bit rich, the crispy texture of the purple onions and the refreshing taste will reset your palate.
Chashu (Braised Pork)
Contains a large chunk of chashu.
Char siu with a meaty texture and just the right amount of fat.
Taste strange: Sudachi
I have sudachi to change the taste, so I'm going to narrow it down.
I prefer dipping sauce or noodles, but this time I chose dipping sauce.
It adds a refreshing taste and eliminates the rich impression of chicken.
split soup
After eating all the noodles, add the dipping sauce and enjoy the soup.
Even though it is called a split soup, it is served by diluting it with the bonito kelp water that the noodles were soaked in.
The flavor of the bonito and kelp is added to the flavor of the chicken.
It was delicious, but the dipping sauce got cold as I continued to eat it, and the bonito kelp water was also already cold, so I think the flaw was that I couldn't eat it piping hot.
Impressions + evaluation
The Chinese soba Chino chicken was delicious.
I absolutely love the noodles here.
The noodles themselves are delicious, and there are also table-top options such as moshio and sudachi, so you can enjoy the hearty 300g portion to the end without getting bored.
Next time I would like to try the soy sauce tsukemen, the ramen is also good, and I would like to try the kamatama abura soba that I ate last time again.
