The store is staffed by one employee, and when I visited, she was cleaning up the dishes.
Considering the time of day, I get the impression that it was right around the end of the lunch rush.
This is a tonkotsu ramen shop that rents a separate store and is only open for lunch.
Tsukiji is an area that attracts many foreign tourists.
This was my first visit, and I felt that they were competing with tonkotsu ramen, which is easily recognized by foreigners.

This time I ordered “Ramen (950 yen)” and “Togarashi Nerikomi Men (Chili-Infused Noodles) (250 yen)” as replacements.
As the name suggests, this is a pork bone ramen restaurant.
The rice bowl arrived in about 5 minutes after ordering.
So let's have it.
Soup
Let's start with the soup.
In terms of appearance and texture, it is not a highly concentrated and sticky type, but is relatively smooth.
The presence of pork bone itself is strong.
Although you can feel the richness of pork bones, it does not have a strong smell unique to pork bones.
For the combination of sauce and pork bones,Shin-Shin” I felt a sense of familiarity.

Although it has the taste of pork bones, it is not too strong and is an easy-to-eat soup.
The soup is made using a splicing method, and is currently in its first year of aging.
I'm also curious about how the taste will change over time.
Noodles
The noodles are Takara Foods' low-hydration thin straight noodles.
The moment you bite into it, it has a nice crunch, and then you can feel the flavor of wheat.
It's a classic combination of smooth yet pork bone soup and thin noodles with low water content.
Chashu (Braised Pork)
The char siu is thinly sliced and rare.
The impression is that it is a slightly unusual type of pork bone ramen.
You can enjoy the flavor of pork while slicing it thinly, and enjoy pork in a different way than with pork bone soup.
Red chili pepper noodles
Next is the replacement ball.
I could have had regular noodles, but I took the opportunity to try the Togarashi Nerikomi Men (Chili-Infused Noodles) (250 yen), which is a type of noodles with chili peppers mixed in.
It looks different from regular noodles.
The spicy taste of chili peppers is added to the basic texture of thin noodles.
It's nice to be able to continue eating while having a slightly different impression from the first cup.
Add it to the soup.
The spiciness of the chili pepper was added to the taste of the pork bones, and I was able to enjoy the change in taste with the substitute egg.
garlic
Press the garlic halfway through cooking to change the taste.
It has a fresh aroma and taste, and goes well with pork bones.
While retaining the presence of pork bone soup, the garlic gives it an even more distinct look.
Red ginger

Finally, add the red ginger on the table.
After layering the flavors of pork bones, chili pepper noodles, and garlic, the refreshing taste of pickled ginger comes in.
By the way, takana is available for a fee.

Impressions and Rating
Tsukiji's ``Ton Soul 78” and “Ramen” I received it.
What I felt through each cup was that it was very easy to eat while still retaining the characteristic of tonkotsu.
The soup has a light consistency, but you can really feel the pork bones, and although it is thick, it doesn't have a strong odor.
The combination with the sauce is also familiar, and I think it's a flavor that is easy to get into, not only for people who are used to tonkotsu ramen, but also for people who don't like the strong taste of tonkotsu.
It is said that the soup made by splicing is in its first year of aging, so I am curious about what the taste will be like as it ages further.
I'd like to come back in a few months and see the changes.
